Step into the heart of Goan monsoon traditions with Karma’s Mackerel Para. This 200-gram jar captures a time-honoured culinary practice that has sustained coastal communities for generations—where the bounty of the Arabian Sea was transformed into a cherished pickle to see families through the rains .

Para, known locally as a dry fish pickle, has been a staple in Goan Catholic homes for centuries . The preparation begins with salted dried mackerel (bangda), which are carefully washed in vinegar, then layered in jars with a piquant spice paste ground entirely in coconut vinegar—a technique that preserves the fish for months . The mackerel itself holds special significance in Goan cuisine, being the most commonly enjoyed fish across the state .

Left to mature for weeks or even months, the para develops a complex flavour profile that is spicy, sour, and salty all at once . When ready to serve, the pickled fish is simply fried and enjoyed with steaming rice and dal .

Our ready-to-eat Mackerel Para honours this legacy, saving you weeks of preparation while preserving every layer of its authentic, piquant character. Bring home the taste of Goa’s monsoon kitchens.
